You really could call this recipe “Co-op Bulk Department Cookies,” because you can find all of the ingredients to make them in our Bulk Foods section. And because you can buy as little or as much as you want in the Bulk section, there are no leftover ingredients and no waste. These Sunflower Cookies have been a favorite at the Co-op for years. Sweetened only with honey, and wheat-free, they are a wholesome alternative for some diets and a satisfying snack worth trying for their nutty, complex flavor.

Co-op Café Sunflower Cookies

Ingredients

  • 5 cups oats
  • 1 cups whole spelt flour
  • 2 cups sunflower seeds
  • 1 1/2 cups water
  • 1 cups honey
  • 1 1/2 cups tahini

Instructions

  1. Combine oats, flour and sunflower seeds in large bowl.
  2. In another bowl, combine water, honey and tahini and mix the wet ingredients together.
  3. Pour wet into dry and mix until just combined.
  4. Scoop onto oiled tray and flatten into rounds that are about three inches in diameter and about ¾ of an inch thick.
  5. Bake at 350 until beginning to lightly brown and the cookies are no longer wet looking.
