By special request from a member – the secret is out of the bag.  Here is the Co-op recipe for one of our most popular dishes in the hot bar and deli case, Sweet and Spicy Tofu.  It’s a Café classic loaded with chunks of peppers and tofu, with just enough ginger to warm you down to your toes. The Café uses a hot grill to sear the sides of the tofu, but you can use an electric griddle or cast iron skillet on your stove at home to achieve the same effect.

Ingredients

  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 bunch scallions chopped
  • cup ½honey
  • cup ¼tamari soy sauce
  • 2 Tbsp. lemon juice
  • 2 tsp. hot toasted sesame oil
  • piece Smallof fresh ginger peeled and grated
  • 1 cup tablespoon of arrowroot powder mixed with 1/8water

Instructions

  1. Slice the tofu into 3 or 4 even slices and grill on both sides until golden.
  2. Cool tofu and cut into triangles or strips.
  3. Combine liquid and ginger. Mix well and bring to a low bubble - add veggies and cook a few minutes until tender.
  4. Whisk in the arrowroot mixture and simmer to thicken.
  5. Add sliced tofu and heat one more minute until coated and warmed.
