Cucumber Dip

Creamy and full of fresh flavor, this cool, refreshing dip is a great way to use fresh garden cucumbers. Serve with pita, bread, crackers or chips! Enjoy!

Ingredients
  • 1/2 cup sour cream
  • 2 green onions chopped
  • 1 tsp garlic minced
  • 3 tablespoon tablespoons fresh dill Reserve 1 Tbsp to sprinkle on top of dip.
  • 1-2 teaspoon freshly squeezed lemon juice
  • Salt and pepper to taste

Cucumber Dip
Instructions
  1. Peel cucumber. Cut in half scoop out seeds. Grate cucumber. To remove excess moisture, squeeze between a clean towel several times. Place cucumber in a small bowl and stir in remaining ingredients. Salt and pepper to taste. Refrigerate until chilled. Sprinkle with additional dill.
