Apple & Almond Butter Breakfast Quinoa

Ingredients

  • 1/3 cup quinoa
  • ¼ cup coconut milk or almond
  • 1 Tbsp. almond butter
  • 1 apple sliced
  • 1 Tbsp. vegan chocolate chips
  • 1 tsp. chia seeds
  • 2 Tbsp. flaked coconut

Instructions

  1. Rinse the quinoa under cold running water to remove its bitter flavor.

  2. Bring the 2/3 of a cup of water to a boil.


  3. Stir in the quinoa, then turn the heat down to low. Cover and simmer until all the liquid is absorbed, about 15 minutes.


  4. Use a fork to fluff and separate the grains.


  5. Mix 1 cup of cooked quinoa in a bowl and add coconut milk to your desired consistency.


  6. Add apple and additional toppings and enjoy.

    You need to clarify the amount of quinoa for 1 Serving. I cooked a cup of quinoa in 2 cups of water and ended up with too much quinoa.
