Creamy and full of fresh flavor, this cool, refreshing dip is a great way to use fresh garden cucumbers. Serve with pita, bread, crackers or chips! Enjoy!
- 1/2 cup sour cream
- 2 green onions chopped
- 1 tsp garlic minced
- 3 tablespoon tablespoons fresh dill Reserve 1 Tbsp to sprinkle on top of dip.
- 1-2 teaspoon freshly squeezed lemon juice
- Salt and pepper to taste
Peel cucumber. Cut in half scoop out seeds. Grate cucumber. To remove excess moisture, squeeze between a clean towel several times. Place cucumber in a small bowl and stir in remaining ingredients. Salt and pepper to taste. Refrigerate until chilled. Sprinkle with additional dill.
