Irish Kitchen Day is just one of the internationally-themed kitchen days that the Café features every Friday this month! This recipe would go well with any stick-to–your- ribs Irish fare that you could dream up for a St. Patrick’s Day celebration, or it makes a nice change as a quick breakfast or snack. You can find raisins, caraway seeds and baking powder and soda in the Co-op’s bulk foods department, so you don’t have to buy more than you need for the recipe.
Ingredients
- 5 cups all purpose white flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons salt
- 1 Tablespoon caraway
- 1/2 cup sugar
- 1/2 pound raisins
- 3 tablespoons lemon juice
- 2 cups soymilk
- 1 tablespoon canola oil
Instructions

Preheat oven to 375°

Mix all dry ingredients in a large bowl.

Mix wet ingredients in a separate bowl, then slowly stir into dry ingredients.

Gather dough into a ball and turn onto a floured surface.

Knead for two minutes, but be sure not to over-knead.

Shape dough into two rounds and place onto a greased baking sheet.

Cut an slit on top of each loaf about one-inch deep.

Bake for about 45 minutes, or until a toothpick inserted into loaf's center comes out clean.
