Mix with salsa for a delicious queso dip. It also makes a great pasta sauce for vegan mac n’ cheese.
Ingredients
- 1 cup raw cashews
- night in water
- 3 tbsp. lemon juice
- 3 tbsp. nutritional yeast
- 3 tbsp. miso
- ¼ tsp. salt
- ¼ tsp. paprika
- ½ cup water
Instructions

Place all ingredients in a high powered blender

Blend on high until desired consistency is reached adding water to thin if necessary

Tip: If using a less powerful blender, soak the cashews or pumpkin seeds in water overnight to soften and drain prior to use.
