
Roasted Sweet Potato Salad with Avocado
Simple plant-based salad with sweet potatoes and avocado.
Ingredients
- 3 medium sweet potatoes
- 2 avocados
- 2 Tbs olive oil
- Juice of 1 lime
- 1 Tbs Apple Cider Vinegar
- ¼ cup fresh cilantro or parsley
- 1 tsp Sea Salt
Instructions

Peel and cube sweet potatoes

Toss with 1 tbs olive oil and roast at 400 degrees for 25 minutes

Meanwhile, cut and de-seed the avocados; remove avocado flesh and cube

Toss avocado with 1 tbs of olive oil and apple cider vinegar. Squeeze juice of lime over top. Sprinkle with cilantro and sea salt.

Remove sweet potatoes from oven and let cool slightly. Toss warm sweet potatoes into avocado mixture.
