Shakshuka

Ingredients

  • 1 Tbsp. olive oil
  • 1/2 onion finely chopped
  • 1/2 sweet red pepper finely diced
  • 2 cloves garlic finely chopped
  • 1/2 tsp. turmeric
  • 2 tsp.cumin
  • 1/2 tsp. sweet paprika
  • 1/2 tsp. smoked paprika
  • 1 tsp. cayenne pepper or to taste
  • 1 cup chopped tomatoes
  • 1 Tbsp. tomato paste
  • 1/4 cup vegetable stock
  • 2 large eggs
  • 2 tsp. cilantro
  • finely chopped
  • 1 green onion finely chopped

Instructions

  1. In an large dutch oven heat oil and fry onions, peppers and garlic until onions are translucent.
  2. Add all of the spices and stir.
  3. Add tomatoes and mix well.
  4. Cook over for 10-20 minutes until this mixture has reduced. If it reduces too quickly, add extra stock.
  5. Create two divots in the tomato sauce, break an egg into each divot.
  6. Cover with tinfoil and cook for 2-4 minutes, depending on how cooked you like your eggs.
  7. Garnish with green onions and cilantro.
  8. Serve one egg per person; Toast is great to dip into the egg yolks!
