Ingredients
- 4 cups Weatherbury unbleached Appalachian Bread Flour
- 2 1/2 cups Weatherbury unbleached Pastry Flour
- 1 Tbsp. yeast
- 4 tsp. melted butter
- 1 cup warm water
- 4 Tbsp. honey
- 1 cup warm milk
- 2 tsp. salt
- 2 large free-range eggs
Instructions

In a small bowl, add the yeast to warm water and allow to sit for 10 minutes.

In a stand mixer, combine the milk, eggs, melted butter, honey and salt.

Add the yeast mixture and stir until combined.

Add the flour. Mix with paddle attachment on low until flour is just incorporated with the wet ingredients.

Switch to the dough hook and knead until dough no longer sticks to the sides of the bowl for about 2 minutes. You may need to add 1/4 cup flour is dough is too sticky. Dough should be slightly sticky and spring back when touched.

Shape your dough into a bow. And allow to rise until double (~1 hour).

Once risen, divide the dough in half. Divide each half into 8 pieces.

Shape dough into a ball (hamburger) or cylinder (hot dog). Brush with melted butter and allow to rise 30 minutes.

Once risen, bake at 375° for 18 minutes until tops are nice and golden.

After baked, brush tops with butter and cool on a wire rack.
