Ingredients

Mexican Rice

  • 2/3 cup brown rice dry
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin ground
  • 2 Tbs cilanto dried
  • 1 16 oz can fire roasted tomatoes drained

Burrito Bowl

  • 1/2 can refried beans
  • 1/2 avocado
  • 1/2 cup corn fresh, frozen, or canned
  • 1/2 tomato diced
  • 1 cup salad greens
  • 1 shallot or small onion diced
  • 1 jalapeño pepper seeds removed, diced

Instructions

  1. First prepare the brown rice according to package directions. Rice will take apx 40 minutes to cook on the stove top.

  2. While rice cooks, combine chili powder, garlic powder, cumin, and cilantro to fire roasted tomatoes in small bow. Mix together to prepare a salsa.

  3. Once rice is cooked, toss with salsa. You may have extra salsa, which you can reserve as a topping for the burrito bowl.

  4. Slice avocado in half and remove the seed and skin. Dice tomato and shallot (or onion), and jalapeño.

  5. Heat refried beans and corn on stove top or in microwave.

  6. To make burrito bowl, start with a base of Mexican Rice. Top with refried beans, avocado, diced tomato, onion, jalapeño, and salad greens. Top with remaining salsa.
