Raw Beet, Broccoli and Carrot Salad

Ingredients

  • 2 beets
  • 1 head of broccoli
  • 6 carrots
  • Dressing
  • 1 tsp minced garlic
  • 3 tbs unrefined olive oil or grapeseed oil
  • 1 tsp soy sauce
  • 1 tsp balsamic vinegar
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Chop broccoli, julienne carrots and beets.
  2. Whisk all dressing ingredients in a bowl
  3. Add chopped vegetables and toss to coat
