Used in New Orleans and much of southern Louisiana for the traditional Monday Creole dish of red beans and rice, there’s no question red kidney beans have a rich history in the United States.
Ingredients
- 1 cup of beans
- 3 cups of water
Instructions

Wash beans and drain.

Cover with cold water, discard floaters and soak 4 to 8 hours in a cool place.

Drain and add 3 cups of fresh water for every cup of beans. Cover and bring to a boil.

Reduce heat and simmer until soft, approx. 1½ hours.
